First Nations Development Institute's Garden Fresh Tomato Salsa

First Nations Development Institute, a national Native American-led 501(c)(3) organization whose mission is to strengthen American Indian economies in support of healthy Native communities, has created cookbooks using recipes from Native American tribes and organizations. Preparing some of these dishes is a great way to bring a delicious taste of Native America to your table.

Garden Fresh Tomato Salsa


1 ¾ pounds fresh tomatoes (peeled and rinsed)
1 small onion
½ green pepper
Small bunch cilantro
3 cloves garlic (minced)
Chile pepper to taste
1 tablespoon honey
Salt to taste


1. Process onion, pepper, cilantro, garlic, pepper, honey and salt in a food processor.

2. Add peeled tomatoes. Process again, and it’s ready to eat. Will keep in refrigerator for one
week. Does not freeze well.
